I am still dreaming about the quick and low fat feast that I made this past weekend. Okay fine, so it wasn't a "feast" but it was delicioso! Turkey, roasted peppers and montery jack burgers with baked sweet potato fries!
Ingredients:
- 1 lb. Ground turkey
- 1 diced roasted pepper
- 1/4 fine shredded low fat montery jack cheese
- 1 egg white 1 sweet potato
- Non-fat cooking spray
Okay so preheat the oven to 400 degrees. Rinse off that sweet potato and cut 1/4"wedges with a steak knife. (Those e can be hard!) Line a cookie sheet with foil and spray bottom with fat free cooking spray and line up your wedges. Give a light spray on top as well. Bake for 20 minutes and flip and bake for another 20 minutes.
Crispy and yummy and hello?!?!? Not fried! Okay let's talk burger! Get a bowl and smash the ground turkey, diced pepper, lite cheese and egg white together and form 4 patties. You can either broil, or cook in pan sprayed with non-fat cooking spray. Internal temperature should read 170 degrees. Great plain or with a little horseradish sauce for a little spunk! See? Drooling!
