Horticulturist/Farmer Mimi Edelman to be Honored at Bedford Post Inn's Farmhouse Restaurant Dinner

The dinnertime guest of honor at the Bedford Post Inn on Sunday, September 29 will be Mimi Edelman, owner and sole employee of I & Me Farm in Bedford Hills.
Edelman grows crops including vegetables and greens for the restaurant in an arrangement known as a "restaurant-supported-agriculture" collaboration.

"Our fields are planned with executive chef Jeremy McMillan in the winter months," she said, "and we revisit the places and meals we have experienced to select new crops and have over the years developed some seasonal favorites." 

During the growing season and at harvesting, a Bedford Post sous chef visits to work with and confer with Edelman. 

Heirloom varieties from around the world are grown at I & Me Farm and include taste-endangered products such as Aunt Molly ground cherries, Edelman pointed out.

She describes herself as a "certified horticulture therapist and farm-based educator" and hopes one day to share her knowledge of small-scale, specialty farming by teaching. "It is a passion I hope to revisit," she said.

Born and raised in Greenwich, Connecticut, she grew up on a large coastal estate where her father was the resident horticulturist and her grandfather bred horses and hunting dogs.

Culinary students, chefs and young farmers can visit the fields to learn more about organic, biodynamic small-scale farming. Tours can be arranged by contacting Edelman by e-mail at meme752@hotmail.com. 

Exactly what ingredients from I & Me Farm will be served during the Sunday dinner "will be dependent on Mother Nature," executive chef Jeremy McMillan said. 

The cost of the prix-fixe dinner is $55 per person plus tax and tip. Dinner will be served from 5 to 9 p.m.
